Four Cheese Stovetop Mac 

.

INGREDIENTS :

- 1 lb cavatappi.

- 1 stick of unsalted butter.

- 1/2 cup all purpose flour.

- 4 cups whole milk.

- Salt and pepper to taste.

- 1 tsp ground mustard.

- 1 tsp garlic powder.

- 1 cup grated  sharp cheddar.

- 1 cup grated grand cru cheese.

- 1 cup grated gouda.

- 1 cup grated mozzarella.

Optional:

- fresh chives

- toasted panko bread crumbs

METHOD :

To start, boil your pasta in salted water a minute less than what package directions calls for Al dente. Drain and set aside.

In a large pot on medium heat, melt you butter.

Add in your flour and constantly stir for 2 mins.

While whisking continuously, pour in your milk. Continue whisking until milk thickens (about 2-3 mins). Add in your spices and mix well. 

Gradually add your cheeses while continuing to stir. Don’t add in all at once, do this in small batches. 

Once well combined and creamy, add back in your pasta. Mix well and remove from heat.

The warm cheese sauce will continue to cook the pasta. 

To serve, top with toasted breadcrumbs and chives.

if you want to bake this, add to a lightly greased 3 qt baking dish and top with more cheese or breadcrumbs. Bake at 325 for 15 mins or until golden and bubbly.
