CABBAGE ROLLS
INGREDIENTS :
1 large Green or Savoy cabbage cored.
2 1/2 lbs of ground chicken or swap chicken for veal or ground beef.
1 cup of Arborio rice .
4 cups water.
3 large carrots grated.
2 medium white onions diced .
1 red chilli pepper (optional).
2 cans of crushed tomatoes (28oz/796ml).
1 jar of Marinara sauce (26oz/770ml).
1 Fresh parsley chopped.
1 tablespoon of salt.
1 teaspoon of black pepper.
¾ cup of olive oil.
1/2 cup of parmesan cheese .
Dry herbs.
1 teaspoon parsley.
1 teaspoon oregano.
1 teaspoon of basil.

METHOD :
Place cabbage in the microwave for 5-10 minutes and remove leaves as demonstrated in video or boil cabbage until leaves are soft.
Grate carrots and dice onions. Cut red chili peppers into small pieces.
On a frying pan, add 1/3 cup of olive oil, sauté onions and chili pepper first before adding grated carrots. Sauté in low heat. Watch video for directions.
Add jar of marinara sauce to your mixture and add dry herbs or simply use your favorite herbs. Add 1 tablespoon of salt adjusting to your own taste along with 1 teaspoon of pepper.
Add fresh parsley to the mixture and fold your ingredients.
Mix together ground chicken with sautéed mixture with 1 cup of rice.
Place 2 tablespoons of your filling mixture on your cabbage leaf removing the rib and roll as demonstrated in the video.
Transfer cabbage rolls to a pot and add tomato sauce along with water, salt, pepper and dry herbs and bring to a boil.
Once boiled, reduce heat to low and cover with lid for approx 1-1/2 hours.
Put on a plate and sprinkle parmesan cheese on top.
